Easy Recipes for Enjoying Kimchi Everyday

3 Minute Pad Thai

Ingredients

  • 1 jar White or Red Kimchi
  • 1/2 cup peanut or almond butter
  • 1 tsp. sesame oil, or more to taste
  • squeeze of lime

Directions

  • Mix it all in a saucepan over medium heat. Pour over rice, noodles, or veggies. Add your favorite protein if desired. 
  • Or leave it cold and add it to wraps, bowls, and appetizers or run it through the food processor for the best Asian dressing you've ever had!

 

Red Kimchi Dip

Ingredients

  • 1 8 oz. block of softened cream cheese. You can also use vegan cream cheese such as Daiya or So Delicious
  • 1 jar Red Kimchi

Directions

  • Stir the cream cheese with a fork first to fluff. Then coarsely chop the Red Kimchi and stir together with cream cheese. Or puree for a smoother texture! Enjoy on crackers, wings, or celery sticks!

 

Probiotic & Protein Grain Bowl

Ingredients

  • 2 cups cooked quinoa, brown rice, farro, or barley
  • 1 cup cucumber, sliced
  • 1/2 cup chickpeas
  • 1 tbsp chopped walnuts
  • 1/2 cup Red or White Kimchi
  • Drizzle EVOO and lemon juice
  • Salt and Pepper to taste

Directions

  • Mix all ingredients in a bowl. Add chopped kale, spinach, edamame, zucchini, or sun-dried tomatoes for an even more full-flavored crunch!

 

Kimchi Pancake

Ingredients

  • 1/2 cup all purpose flour
  • 1/4 cup potato starch (or rice flour)
  • 1/4 tsp salt
  • 1 cup Red Kimchi, chopped
  • 2 scallions, chopped
  • 3 tbsp Red Kimchi juice
  • 1/3 cup cold water

Dipping Sauce

  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp chili oil

Instructions

  • Into a large bowl, combine the flour, potato starch and salt and stir. Then add the Red Kimchi, Red Kimchi juice, scallions and water. Stir the mixture until combined into a thick batter.
  • Heat a large pan over medium-high heat. Brush the pan with 1 tsp of oil. Pour half the batter onto the pan. Spread the batter to create an even layer. Fry until browned and crispy and the edges look slightly cooked. Flip the pancake and cook for another 3-4 minutes or until browned and crispy. Repeat with the remaining batter. 
  • While waiting, prepare the dipping sauce by combining all the ingredients. Once the pancakes are finished, slice them into 6-8 pieces and serve with the dipping sauce. Enjoy!
